Bellenda Prosecco Sparkling

Founded more than 20 years ago by the Cosmo family, the Bellenda Winery has emerged as one of Italy’s top producers of quality Sparkling Wines receiving countless awards and accolades across the globe. Located North of Venice in the Vittoria Veneto region of Northeast Italy, the Cosmo family have been growing their own grapes for generations in the foothills of the Alps at an elevation of about 300 meters.

Bellenda Prosecco Kosher is the Cosmo Family’s first kosher production. Although this is a non-vintage wine, it was finished and bottled at the end of 2006 with only about 20,000 bottles produced in total. This sparkling wine is made from Prosecco grapes grown on the hillsides of Conegliano and Valdobbiadene, which are then vinified before the resultant wine undergoes bottle fermentation, all under the watchful eye of Rabbi Shalom Elimelech of Milan.

Evanescence: Abundant and evanescent, with a fine-grained, persistent, continuous perlage
Colour: Lustrous, pale straw-yellow.
Bouquet: Incredibly refined and intense, delicate bouquet with discernible fruitiness
Taste:

Crisp, poised and pleasantly delicate, with well-controlled body.

Unlike most Proseccos which undergo one and a half months of initial fermentation in stainless steel tanks, this kosher production spent nine months in tanks resting on their Lees yielding a much toastier, fruitier palette than one might find in non-kosher Proseccos.

This smooth, delicate and highly refined Spumante has a characteristically fruity, floral bouquet and displays an abundance of evanescent bubbles against a luminous, brilliant backdrop. Extremely elegant yet intense, it is at its best when served at a temperature of about 46 degrees Fahrenheit. It is excellent as an aperitif, but also works very well as an accompaniment to poultry, light, white fish dishes, pastries and fruit-based desserts. Non-Mevushal. Golden straw color with limp bubbles. Brioche, kiwi, and balloon-like aromas. A stridently sharp and low grade fizz entry leads to a sour and sweet light-to-medium body of honeyed apple, old oregano, kiwi, and pear flavors with a touch of spice. Finishes with a quick powdery fade.
